Coconut Chicken & Shrimp with Hawaiian Spice dipping sauce

Coconut ShrimpBeer Battered Coconut Chicken TendersCrispy, tender, juicy & sweet.  Yum!  Whether you choose to use chicken strips or jumbo shrimp, you cannot go wrong with this being a crowd pleaser.  It took me a while to understand that I needed an actual beer batter to make this recipe successful.  Whenever I attempted to make it in the past, my coconut ended up falling off and floating all over the fryer.  Quite messy.  Also a key ingredient:  using sweetened coconut.  Most recipes I have tried in the past for some reason called for unsweetened coconut (the kind you find in the freezer section of the grocery store). Weird.  It was way too bland for us.
